Three chicken breasts cut up into bite-sized chunks
1 small head broccoli, cut into florets
Half a white onion, diced
1 tsp basil
One 14 oz can of coconut milk
5 oz red curry paste
2 heaping Tbsp Peanut butter
Cayenne pepper to taste
2 cloves garlic, minced
Coat slow cooker lightly with cooking spray.  Cut up chicken and place it in slow cooker.  Season the the chicken breast with salt, pepper, and cayenne pepper.  In a bowl, mix coconut milk, onion, basil, red curry paste, peanut butter and garlic.  Pour mixture over chicken.  The peanut butter won’t be mixed well, but don’t worry!  It will melt in slow cooker.  Cook on low for about 4 hours.  Add broccoli about 30 minutes before serving.
